Hola! It’s been a lifetime, a.k.a. a week, ahem, since I’ve had a chance to post. Among the many other things that happened this week, we learned how to bake maleta de pollo with the Genesis Baking Cooperative in Limon 2. (Kind of like an empanada or calzone, this bread’s name literally translates to “chicken suitcase” – love it!) I created a slide show of images and wrote up a little blog post for Casa Verde’s Web site; here’s the post and all the images. Yum! * * * Hello! My name is Sara Bernard and I’m participating in Casa Verde’s summer 2012 program in Limon with four others, including three student filmmakers from North Carolina. As a journalist by trade and a grant recipient with Casa Verde’s fiscal sponsor, Omprakash, I’ll be doing some guest blogging for Casa Verde over the next couple of weeks (among a whole bunch of other things). Stay tuned for more updates on the massive reforestation project that’s already successfully underway, Formation Fenix’s vermiculture workshops, and the cross-cultural documentary skillshare in the works for next week. So….What Is a Chicken Suitcase? It’s something akin to a chicken empanada, actually, but if you translate maleta de pollo literally, that’s what you get: fresh bread as a way to carry chicken while you travel. On July 2, Casa Verde participants visited the Genesis Baking Cooperative, a collection of talented chefs who fill Limon with tempting aromas using a wood-fired cob oven on Mondays, Wednesdays, and Fridays. (You may recognize Casa Verde’s Lidieth Alvarez; did you know she also does the management and accounting for a small bakery?) When asked to provide hearty snacks for the hundreds of people planting thousands of trees at the Casa Verde site this week, Genesis opted for some maletas de pollo and invited us to stop by and learn how it’s done. I took so many photographs that by flipping though them I could almost watch the treats bake themselves to perfection again before my very eyes. So, I formalized them a bit by creating a slide show. I’d like to offer Genesis this piece of media to get a few mouths watering and help generate support for their next venture: opening a cafe in Limon.
